CARIBBEAN CHICKEN BURGER


Ingredients

  • 1 pound ground chicken
  • 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes W/Lime Juice & Cilantro, drained very well OR
  • 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes With Chipotle, drained very well
  • 1 egg, beaten
  • ½ cup bread crumbs
  • Salt and black pepper to taste

Instructions

  1. Set EGG for direct cooking at 350ºF/177ºC.
  2. Combine ground chicken, Red Gold Tomatoes, egg and bread crumbs in a bowl.  Form into patties and season with salt and black pepper.
  3. Place on EGG and cook to desired temperature.

Makes 4 servings

Special Accompaniments:

*Serve on toasted bun or lettuce leaf

*Guacamole, avocado or grilled pineapple slice

*Top with Mango Chutney or Fruit Salsa
