ROASTED FIRE SALSA

- 6 Roma tomatoes
- 1 large onion
- 1 head of garlic
- 1 jalapeño
- 1 serrano pepper
- 1 bunch of cilantro
- Salt to taste
- Cumin to taste
- Once your Big Green Egg is at 350°F, place the tomatoes, onion, garlic, and peppers directly on the cooking grate.
- Once the peppers and tomatoes were blistered (roughly 10 minutes), set aside to cool and continue grilling the onion and garlic for another 15 minutes or so.
- Then remove the skins from your tomatoes and peppers and remove the pepper seeds (leave them in for extra heat).
- Next, add the tomatoes, peppers, onions, garlic, chopped cilantro, salt and cumin into a blender and pulse about 10 times or to your desired consistency.
