  • 6 Roma tomatoes
  • 1 large onion
  • 1 head of garlic
  • 1 jalapeño
  • 1 serrano pepper
  • 1 bunch of cilantro
  • Salt to taste
  • Cumin to taste


  1. Once your Big Green Egg is at 350°F, place the tomatoes, onion, garlic, and peppers directly on the cooking grate.
  2. Once the peppers and tomatoes were blistered (roughly 10 minutes), set aside to cool and continue grilling the onion and garlic for another 15 minutes or so.
  3. Then remove the skins from your tomatoes and peppers and remove the pepper seeds (leave them in for extra heat).
  4. Next, add the tomatoes, peppers, onions, garlic, chopped cilantro, salt and cumin into a blender and pulse about 10 times or to your desired consistency.
