CARIBBEAN CHICKEN BURGER
- 1 pound ground chicken
- 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes W/Lime Juice & Cilantro, drained very well OR
- 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes With Chipotle, drained very well
- 1 egg, beaten
- ½ cup bread crumbs
- Salt and black pepper to taste
- Set EGG for direct cooking at 350ºF/177ºC.
- Combine ground chicken, Red Gold Tomatoes, egg and bread crumbs in a bowl. Form into patties and season with salt and black pepper.
- Place on EGG and cook to desired temperature.
Makes 4 servings
*Serve on toasted bun or lettuce leaf
*Guacamole, avocado or grilled pineapple slice
*Top with Mango Chutney or Fruit Salsa
